Organoleptic characteristics: Colour: intense ruby ​​red tending towards garnet with the passing of time. Smell: pleasant and intense. It presents distinct notes of small black fruits such as blackcurrant and blueberry, accompanied by hints of Sicilian aromatic herbs. Taste: dry, harmonious and characterised by soft grains. It has a silky tannicity that gives it good structure and a pleasant persistence.

Winemaking

Cryomaceration for 12 hours. Controlled fermentation at a temperature of 18°C ​​with prolonged maceration on the skins to extract color and polyphenols without weighing down the structure. 30% of the product is aged in French oak barriques for 5/6 months to add notes of vanilla and cocoa, the rest in steel for approximately 5/6 months.
